Fruits tartlets



INGREDIENTS
  • pastry cream
  • fruits: strawberries, raspberries, kiwi, pineapple, mango...
Tart shells:
  • 2 c. flour
  • 1 tsp. salt
  • 2 tbsp. chilled butter
  • 2/3 c. leaf lard
  • 1/4 to 1/2 c. water 
METHOD

       1 Mix flour and salt, cut in shortening until mixture is crumbly. Add enough water to pull dough together. Roll out to fit individual tart shells. Weight down dough and bake at 350°F for about 12 minutes, until lightly browned.

       2 To Assemble Tarts:
Fill prebaked shells with custard filling and top with fresh strawberries. Glaze with melted apricot jelly if desired.
